Every traveler visiting and people living in Riviera Maya must eat in this place - on a regular basis! A traditional Mexican taquería (taco place) in Tulum town offering the 3 most iconic dishes in the region: Cochinita Pibil, Lechón, & Relleno Negro.
Cochinita Pibil (also puerco pibil) is a traditional Mexican slow-roasted pork dish from the Yucatán Peninsula. Preparation of traditional cochinita involves marinating the meat in strongly acidic citrus juice, seasoning it with annatto seed which imparts a vivid burnt orange color, and roasting the meat while it is wrapped in banana leaf.
Lechón (a suckling pig) is cooked with a light adobo and bake until falling apart tender. The meat is pulled and heaped onto tortillas served with chicharrón (fried pork belly). Lechón meat is similar to carnitas but the flavor is purer, lighter and less oily.
Relleno Negro (black stuffing) is a dish based on turkey with a mixed chili peppers (chilmole) sauce. The black color for the stew comes from the mixture and toast of the chilies that are used in the chilmole.
There are other few options in the menu, but this place is all about these 3 dishes. Like in most places around you can order any of the dishes served in a taco (tortilla) or in a torta (bread). There is also another option that is in a quesadilla, which is basically a bigger taco with cheese.
Remember to enjoy your tacos with a fresh flavored water, to complete the full experience: jamaica (hibiscus), horchata (rice based, vanilla, cinammon), tamarindo (tamarind), or melón.
***TIP: Always add lime juice and salsa to your cochinita and lechón tacos; and only habanero salsa to your relleno negro tacos for an extra kick of spiciness.
